Christmas may be over, but the city still sparkles with holiday joy. To help stretch the season festivity, one treat I love this time of year is warm brownies cooked with a dash of peppermint oil. Below is the recipe for all to try and enjoy. Let me know how it works out and send pics!
Peppermint Brownies
INGREDIENTS:
– 1 1/4 cups all-purpose flour
– 1 tsp baking powder
– 2 cups sugar
– 3 eggs at room temperature
– 2/3 cup cocoa powder
– 1 tsp salt
– 1 tsp vanilla
– 2 sticks butter, melted
– bag of peppermints
– 5 drops Young Living peppermint vitality essential oil.
– Chocolate frosting (I went with store pre-made in lieu of time)
DIRECTIONS:
– Preheat oven to 350 F
– Mix dry ingredients in one bowl
– In a second bowl, mix wet ingredients (this includes the oil)
– Combine wet and dry ingredients and pour into greased 9X13 pan
– Sprinkle crushed peppermints into batter
– Bake for 22-25 minutes (test with a toothpick)
– Remove from oven to cool
– Spread chocolate frosting on top of the brownies
– If looking for extra flavor or food decor, sprinkle some crushed mints atop the frosting
– Optional: If you want the whipping cream as pictured below, add a layer below the chocolate frosting (mix sugar, vanilla, butter and whipping cream with a blender till it meets a texture of your desire)
