Herb-Crusted Salmon with Lemon Garlic Orzo

This dish is a family favourite and one you will love, too! It is a wholesome, well-rounded meal that is easy to prepare and loved by all. The combination of crispy, flavorful salmon and creamy, garlicky orzo is sophisticated yet approachable, making it a versatile dish for any gathering. This recipe is a perfect choice for any occasion, whether it is a cozy date night with your spouse or partner, hosting guests, or a family meal at home.

Ingredients:

For the Salmon:

•4 salmon fillets (skin-on or off)

•2 tablespoons Dijon mustard

•1/4 cup breadcrumbs(panko or regular)

•2 tablespoons fresh parsley, finely chopped

•1 tablespoon fresh dill, finely chopped

•1 teaspoon lemon zest

•2 tablespoons olive oil

•Salt and black pepper, to taste

For the Lemon Garlic Orzo:

•1 cup orzo pasta

•2 tablespoons olive oil

•2 cloves garlic, minced

•Juice and zest of 1 lemon

•1/4 cup grated Parmesan cheese (optional)

•2 tablespoons fresh basil or parsley, chopped

•Salt and black pepper, to taste

Instructions:

For the Herb-Crusted Salmon:

1. Preheat oven: Heat to 400°F (200°C). Line a baking sheet with parchment paper.

2. Prepare the crust: In a bowl, mix breadcrumbs, parsley, dill, lemon zest, olive oil, salt, and pepper.

3. Coat the salmon: Place salmon fillets on the prepared baking sheet. Spread a thin layer of Dijon mustard over the top of each fillet. Press the herb-breadcrumb mixture onto the mustard-coated side.

4. Bake: Roast salmon for 12-15 minutes, or until the crust is golden and the salmon is cooked through (internal temp of 145°F).

For the Lemon Garlic Orzo:

1. Cook the orzo: Boil in salted water according to package instructions. Drain and set aside.

2. Sauté garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.

3. Combine flavors: Stir in the cooked orzo, lemon juice, lemon zest, Parmesan (if using), and fresh herbs. Season with salt and pepper to taste.

I am by no means a fancy chef and I love preparing this meal, especially if the kids want to help out. The dish feels fancy but comes together quickly and can be great to serve at any occasion. Some side options could be roasted red potatoes, asparagus, or a wonderful salad filled with colorful vegetables!
